Which side of Kauai is the best to stay on?

The south shore (Poipu) is the best base for most visitors. Poipu has the most reliable sunshine year-round, the island's best beach for swimming and snorkeling, a good selection of restaurants, and central access to both Waimea Canyon (45 minutes west) and the north shore (45–60 minutes northeast). The north shore (Princeville, Hanalei) is Kauai's most scenic and dramatic base — closer to Hanalei Bay, Tunnels Beach, and the trailhead for the Kalalau Trail, but more expensive and more prone to rain and road closures in winter. Kapaa on the east side is the most affordable option with a local, less touristy feel, midway between north and south. For a first visit: Poipu for reliability and convenience. For romance and scenery: Princeville. For budget travel: Kapaa.
